Mexican Red Bean Burger

 
 

It was love at first bite. This burger recipe is simply too good not to try.


MAKES: 4 Large Burgers


INGREDIENTS

For the burger patty

  • 3 cups (boiled and drained) red kidney beans

    • Soak 1 cup red kidney beans overnight and wash pressure cook them with 500 ml water, pinch of baking soda and 1/4 tsp of salt and give about 8-10 whistles. Once pressure is released open the cooker, check if boiled well by pressing a bean with hand. It should be very soft otherwise give more whistles .once boiled then drain all the water and use the beans.

  • 1 cup boiled brown or white rice

  • 1/2 cup finely chopped onion

  • 1/2 cup finely chopped mix color bell peppers

  • 2 green chilies

  • 1 inch ginger

  • 25g fresh mint leaves

  • 25g cilantro leaves

  • 1 tsp Himalayan Red Salt

  • 1/2 tsp red chili powder

  • 1/4 tsp turmeric powder

  • 1/4 tsp fennel seed powder

  • 1/4 tsp roasted cumin seed powder

  • A pinch of cinnamon powder

  • A pinch of nutmeg powder

  • A pinch of asafoetida

  • 3 tbsp fresh lemon juice

  • 1/4 tsp black pepper powder

  • 1 level tbsp corn flour

  • 5 tbsp Olive Oil

For Burger


Method

  1. Crush boiled red kidney beans partially with a potato masher.

  2. In a chopper, add mint leaves, cilantro leaves ,green chillies, ginger and boiled brown rice and chop coarsely. Make sure to blend well.

  3. In a wok add 1 tbsp of olive oil. Add asafoetida and onions. Sauté for 2 minutes and add bell peppers and sauté for further 2 minutes till soft.

  4. Add crushed kidney beans, rice and herbs mixture. Mix well with potato masher and saute for 2 minutes.

  5. Now add in all the spices: red chilli powder, himalayan red salt, turmeric powder, fennel seed powder, roasted cumin seed powder ,cinnamon powder nutmeg powder and black pepper powder.

  6. Add lemon juice & corn flour and mix it all together well. Adjust the seasoning as per your taste.

  7. Let the mixture cool a bit then divide into 4 parts and form a patty.

  8. Using 1 tbsp of oil for each patty roast on a nonstick griddle till crispy on both sides.

  9. Time to now prepare your burger for serving. Split your buns in half and roast the buns with butter.

  10. Lay a salad leaf on top of the bun and drizzle mint sauce then place the burger patty on top. Place a spoonful of salsa and drizzle with mint sauce again. Cover with bun and serve hot.


Helpful TIPS

  • You can add cheese, jalapenos and any other sauces such as guacamole , mustard or siracha as extra toppings.
