Whole Wheat Oats Banana Muffins

 
 

Love bananas. Love oats. Love muffins. Love them together!


Makes: 6 pieces


INGREDIENTS

  • 2 medium ripe bananas (after peeling weight 200g)

  • 1/2 cup brown sugar (60g)

  • 1/4 cup rolled oats (20g)

  • 1 cup / 120g whole wheat flour

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp ground cinnamon

  • 1 tbsp olive oil

  • 1 tbsp thick yoghurt

  • 50 ml / 1/4 cup milk

  • 1/2 tbsp white vinegar

  • 1/4 cup chopped walnuts

  • 1 tbsp rolled oats mixture with 1 tbsp brown sugar to sprinkle


Method

  1. Pre heat the oven to 180 degrees and put paper cups or grease a muffin tray

  2. Sieve wheat flour, baking soda and baking powder 2 times and mix rolled oats in it and keep aside.

  3. Break bananas into pieces and add brown sugar, cinnamon, melted butter, olive oil, vinegar and milk. Blend this with a hand blender to make smooth.

  4. Add flour mixture to this wet mixture and mix with a wooden spoon. Add chopped walnuts and 1 tbsp of yoghurt and mix it all well.

  5. Divide the batter evenly and pour into the muffin cups. Sprinkle some oats and sugar on top of each one.

  6. Bake in a preheated oven for 30 mins. Once done, remove from oven and let it cool.

  7. Serve hot or cold as an afternoon snack, dessert or breakfast.


Helpful TIPS

  • Always take ripe bananas for perfect results.

  • Your can reduce or increase sugar as per your taste.

  • You can substitute walnuts with chocolate chips as well.
