Yachaejeon

 
 

Try your hands at this recipe for Yachaejeon, loaded with a variety of veggies of your choice. It’s simple & quick to prepare. It will make for a delicious savoury snack to serve at breakfast, lunch or dinner. Did you know yachaejeon is made up of two Korean words put together which translates to yachae (veggies) jeon (fried pancake).


MAKES: 1 large pancake


INGREDIENTS

Veggies sliced length wise into very fine sticks all mixed together for about 3 cups or 160g

  • French beans

  • Spring onions

  • Leek (white part only)

  • Sweet potato

  • Red and yellow bell peppers

  • Carrot

  • 1 tbsp grated ginger

  • 1 tbsp fresh red or green chili

  • 1/2 cup or 50g all purpose flour

  • 2 tbsp level or 10g corn flour

  • 1/4 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp crushed black pepper

  • 1/2 cup or 100ml water

  • 2 tbsp peanut or sunflower oil

For Spicy Soy Dipping Sauce (Mix all the ingredients below)

  • 2 tbsp dark soy sauce

  • 1 tsp vinegar

  • 1 tsp fresh lemon juice

  • 1/2 tsp minced garlic

  • pinch of any dry herb like mint ,dill or parsley

  • 1 tsp finely chopped red or green chili

  • 2 tsp brown sugar

  • 1 tsp toasted sesame seeds (dry roast white sesame seeds on a griddle)


Method

  1. Wash and chop all veggies into fine stick shapes.

  2. In a bowl mix all purpose flour, corn flour, baking powder, salt, pepper. Add water and whisk the mixture to make a smooth sauce.

  3. Add all the veggies measuring total 160g along with the grated ginger, chopped chilis into the flour mixture. Mix it well. The vegetables will release some water so mix at the time of making only. you can use a little more water if the mixture is a bit dry. If the mixture seems wet add in a bit more flour.

  4. Heat a non-stick griddle and add 1 tbsp oil and spread the complete mixture evenly over your entire griddle. Alternatively you can make mini pancakes too.

  5. Cook for 5-8 minutes on medium to high heat till you see no wet dough on top. Smear 1 tbsp of oil on top and flip the pancake over using two spatulas.

  6. Cook the other side for 5-8 minutes as well till crispy.

  7. Cut and serve with spicy soy sauce.


Helpful TIPS

  • You can choose any veggies you like as per availability.

  • If making the batter in advance you can mix everything except the salt and baking powder. Add these two at the time of cooking into your batter as salt releases water from vegetables and makes the batter thin if mixed early.
