Ragi Almond Cake

 
 

Sweet tooth getting in the way of your healthier eating new year’s resolutions? Don’t worry, bake this rocking ragi almond cake recipe and sticking to your resolution will be a piece of cake.


MAKES: 1 cake


INGREDIENTS

  • 1 cup or 100g ragi flour

  • 1/2 cup or 35g almond powder

  • 1/2 cup or 75g fine semolina

  • 1/2 tsp baking soda

  • 200g jaggery powder (or coconut sugar or brown sugar)

  • 1 cup or 200g Geek yoghurt (thick fresh yoghurt)

  • 100 ml warm milk

  • 1 tsp baking powder

  • 50g chopped almonds (with skin)

  • 1/3 cup olive oil (yellow)

  • 1/8 tsp salt

  • 1/2 tsp vanilla essence


Method

  1. Preheat the oven at 180°C and grease a long shape baking tin with oil and ragi flour or grease the tin and line it with butter paper.

  2. Slice almonds in long slivered slices.

  3. Mix the ragi flour, almond powder, semolina, salt and baking powder. (Do not add baking soda) . sieve the mixture three times with a thick sieve to incorporate air.

  4. After sieving, add half of the almonds rubbing them in the flour and mix well.

  5. In a big bowl, mix jaggery powder, vanilla essence and thick yoghurt and mix well till both are blended well.

  6. Next, add the flour mix and warm milk to your yoghurt mix. mix with a wooden spoon. Leave the mixture covered for 10 mins.

  7. Add in oil to this mix and gently stir till oil is blended in the cake mixture in one direction. now add in baking soda and mix lightly in one direction . (cut and fold method).

  8. Pour the mixture into your cake tin , tap the tin twice on the table to let the mixture spread evenly and sprinkle the remaining almonds on top all over.

  9. Bake in the preheated oven for 30-35 minutes at 180°C.

  10. Do not open the oven for at least 25 minutes. After 25 minutes, open the oven and check with a toothpick or knife by pricking the center. If it comes out dry, the cake is done. If it comes wet, let the cake bake for some more time.

  11. Once done, remove from the oven and let it cool.

  12. Cut into slices and enjoy with Nutella, vanilla ice cream, chocolate sauce or simply as is, warm or cold.


Helpful Tips

  • You can crush almonds in a mixer to get almond powder if you don’t have ready almond powder.

  • Olive oil can be substituted with butter or any other oil.

  • Grind semolina in a mixer to get fine semolina.

  • Do not add excess almonds as it will sink down and make your cake sink from middle.
